The varieties that contribute to the cuvée of this Charmat Extra Dry method sparkling wine are all indigenous.
Western Sicily, the countryside of Trapani, are the undisputed and primeval kingdom of the white grape varieties of the whole island. The base wines obtained for the assembly come from aromatic and semi-aromatic vines, particularly suitable for a Martinotti processing. The harvesting periods take place in different time frames, not too distant from each other, which cover the arc of the second decade of August up to the very first days of September.
Vinified separately, the grapes give life to base wines that are different in their two-dimensionality, made of freshness and softness. All the base wines are from the same vintage and are blended and subjected to sparkling to obtain a lively and captivating bubble on the palate. Thus all the aromas of the Sicilian countryside emerge: citrus fruits, stick fruit, cereals, balsamic herbs and Mediterranean herbs.
